Making Homemade Irish Cream

I was going to post one of the yummy recipes I have made in the past few weeks, but last Friday, I got together with some friends to make Irish Cream. And that took precedence over any other recipe. It was delicious! Plus, we all need a little something to make it through the holidays. Let this be your treat this holiday season. It also makes a great gift. Just cut a circle of fabric and put it on the top of a mason jar, threaded under the ring. We're giving this to Baby T's daycare providers. I'm sure they need it!

Homemade Irish Cream Recipe
  • 1 can sweetened condensed milk (You'll use the can to measure out the rest of the liquids)
  • half and half
  • whiskey (we tried both Dewars Scotch Whiskey and Jameson Irish Whiskey. They both tasted good. We each had an individual preference at first, but after a few sips you like it all.)
  • 1/4 tsp coconut extract
  • 1 tsp instant coffee mixed with 1 Tbsp water
  • 2 Tbsp chocolate syrup
Mix 1 can of sweetened condensed milk, 1 can of half and half, 1 can of whiskey, and the rest of the ingredients in a bowl. Whisk until completely combined. Store in a pitcher, mason jar or other container in the fridge. I've been told that this can last for a long, long time (as in, up to a year) but I'm not making any claims. It probably will disappear long before that anyway.

Oh, this sounds fantastic! I love me some Bailey's on the rocks in front of the tree. :) If I knew more about canning, I bet that'd be a great way to process and keep it for year-'round enjoyment.

I adore Bailey's! I have another recipe for Irish cream that uses eggs and will only keep for ~2 weeks. Blech. But, I think I'll try this one. I've made my own kahlua in the past (yum!!) and time to make something else. :)
